Baked Cod with Lemon and Garlic Green Beans

Ingredients
2 fresh cod fillets (about 6 ounces each)
1 tablespoon olive oil
1 teaspoon lemon zest
1 tablespoon lemon juice
2 cloves garlic, minced
Salt and pepper to taste
1 cup green beans, trimmed
1 teaspoon fresh parsley, chopped (for garnish)

Instructions

Preheat the oven to 400 degrees Fahrenheit.

In a small bowl, mix olive oil, lemon zest, lemon juice, minced garlic, salt, and pepper.

Place the cod fillets in a baking dish and brush the lemon-garlic mixture generously over the fillets.

Arrange the trimmed green beans around the cod in the baking dish. Drizzle any remaining lemon-garlic mixture over the green beans and season with extra salt and pepper if desired.

Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for about 15 minutes.

After 15 minutes, remove the foil and bake for an additional 5 minutes, or until the cod flakes easily with a fork and the green beans are tender but still crisp.

Remove from the oven and let it cool slightly. Serve the dish hot, garnished with fresh parsley.
