Grilled Lamb Chops with Mint Yogurt and Zucchini

Ingredients
4 lamb chops
2 medium zucchinis, sliced
1 tablespoon olive oil
Salt and pepper to taste
1 cup Greek yogurt (unsweetened)
1/4 cup fresh mint leaves, finely chopped
1 teaspoon lemon juice
1 clove garlic, minced
Instructions
Start by marinating the lamb chops. In a bowl, combine olive oil, salt, and pepper. Rub this mixture evenly over the lamb chops. Let them marinate for about 10 minutes while you prepare the yogurt sauce and zucchini.
In another bowl, mix the Greek yogurt, chopped mint leaves, lemon juice, and minced garlic. Stir well and set aside.
Preheat your grill or grill pan over medium-high heat. Grill the lamb chops for about 4-5 minutes on each side or until they reach your desired level of doneness.
While the lamb is grilling, heat a non-stick skillet over medium heat. Add a touch of olive oil if necessary and sauté the zucchini slices for about 3-4 minutes until they are tender yet still crisp. Season with salt and pepper.
Once the lamb chops are cooked, remove them from the grill and let them rest for a couple of minutes.
