Baked Cod with Roasted Vegetables

Ingredients:
– 2 cod fillets (about six ounces each)
– 1 zucchini, sliced
– 1 bell pepper (any color), sliced
– 1 cup cherry tomatoes
– 1 tablespoon olive oil
– 1 teaspoon dried oregano
– 1 teaspoon garlic powder
– Salt and pepper to taste
– Fresh lemon wedges for serving
– Fresh parsley for garnish (optional)
Instructions:
1. Preheat the oven to 400 degrees Fahrenheit.
2. On a large baking sheet, toss the zucchini, bell pepper, and cherry tomatoes with olive oil, oregano, garlic powder, salt, and pepper until evenly coated. Spread the vegetables in a single layer on one side of the baking sheet.
3. Place the cod fillets on the other side of the baking sheet. Drizzle a small amount of olive oil over the fillets and season with salt and pepper.
4. Bake in the preheated oven for about 20 to 25 minutes, or until the cod is cooked through and flakes easily with a fork, and the vegetables are tender and slightly caramelized.
5. Once finished, remove from the oven and let it cool slightly. Serve the baked cod with the roasted vegetables on the side. Squeeze fresh lemon juice over the top and garnish with parsley if desired.
