Cauliflower Pizza with Spinach and Feta

Ingredients:
1 medium head of cauliflower
1 large egg
1 cup shredded mozzarella cheese
1 teaspoon dried oregano
1 teaspoon garlic powder
Salt and pepper to taste
2 cups fresh spinach, chopped
1/2 cup crumbled feta cheese
1/4 cup sliced black olives (optional)
Olive oil for drizzling
Instructions:
Begin by preheating the oven to 425 degrees Fahrenheit.
While the oven heats, prepare the cauliflower. Remove the leaves and stem from the cauliflower and cut it into florets. Place the florets in a food processor and pulse until they resemble rice or finely grated cheese.
Transfer the riced cauliflower to a large microwave-safe bowl. Cover it with a damp paper towel and microwave on high for about 5 minutes to steam until soft. After microwaving, allow it to cool slightly.
Using a clean kitchen towel or cheesecloth, squeeze out the excess moisture from the cauliflower to ensure the crust will hold together well.
In the same bowl, combine the riced cauliflower, egg, mozzarella cheese, oregano, garlic powder, salt, and pepper. Mix until all the ingredients are well combined.
Line a baking sheet with parchment paper and spread the cauliflower mixture into a round pizza shape, about half an inch thick.
Bake the cauliflower crust in the preheated oven for 20 minutes or until it turns golden brown and crispy at the edges.
While the crust bakes, prepare the topping. In a skillet over medium heat, lightly sauté the chopped spinach until wilted, which should take about 2-3 minutes.
Remove the crust from the oven and spread the sautéed spinach evenly over the top. Sprinkle the crumbled feta cheese and, if desired, sliced black olives on top of the spinach.
Return the pizza to the oven for an additional 5 minutes, allowing the cheese to melt.
Once done, take the pizza out and let it cool for a couple of minutes. Drizzle a little olive oil over the top for added flavor before slicing and serving.
