Grilled Shrimp Skewers with Roasted Vegetables

Ingredients:
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon lemon juice
Salt and pepper to taste
1 zucchini, sliced
1 bell pepper (any color), diced
1 cup cherry tomatoes
1 red onion, cut into wedges
Fresh parsley, chopped for garnish
Instructions:
1. In a bowl, combine the olive oil, minced garlic, smoked paprika, lemon juice, salt, and pepper. Add the shrimp and toss to coat evenly. Let it marinate for about 10 minutes.
2. Preheat the grill to medium-high heat.
3. While the grill is heating, prepare the vegetables. Toss the zucchini, bell pepper, cherry tomatoes, and red onion in a separate bowl with a drizzle of olive oil, salt, and pepper.
4. Thread the marinated shrimp onto skewers, leaving some space between each shrimp for even cooking.
5. Place the vegetable mixture on a baking sheet. Roast the vegetables in the oven at 425°F for about 15 minutes, or until tender and slightly caramelized.
6. Grill the shrimp skewers for 2-3 minutes on each side, until they turn pink and opaque.
7. Serve the grilled shrimp skewers alongside the roasted vegetables on a large plate.
