Cauliflower Crust Pizza with Veggies

Ingredients
1 medium head of cauliflower
1 large egg
1 cup shredded mozzarella cheese
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup marinara sauce (no added sugar)
1 cup diced vegetables (such as bell peppers, mushrooms, and spinach)
1/4 cup sliced black olives (optional)
1/4 cup grated Parmesan cheese (optional)
Instructions
1. Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.
2. Cut the cauliflower into florets and steam until tender, about 5-7 minutes. Once cooked, let it cool slightly, then transfer to a food processor.
3. Pulse the cauliflower until it reaches a rice-like texture. Transfer to a clean kitchen towel and squeeze out as much moisture as possible to prevent a soggy crust.
4. In a mixing bowl, combine the riced cauliflower, egg, mozzarella cheese, dried oregano, garlic powder, salt, and black pepper. Mix well until a dough-like consistency forms.
5. Spread the cauliflower mixture onto the prepared baking sheet in a circular shape to form the crust, about 1/4 inch thick.
6. Bake the crust for 15-20 minutes, until it is golden brown and crispy.
7. Remove the crust from the oven and spread the marinara sauce evenly over the top.
8. Sprinkle the diced vegetables and olives, if using, over the sauce.
9. Add additional mozzarella and grated Parmesan cheese on top for extra flavor.
10. Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
11. Remove from the oven, let it cool for a few minutes, then slice and serve.
