Grilled Chicken and Veggie Skewers
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Ingredients:
– 1 pound boneless, skinless chicken breast, cut into 1-inch cubes
– 1 medium zucchini, sliced into half-moons
– 1 bell pepper (red, yellow, or green), cut into bite-sized pieces
– 1 cup cherry tomatoes
– 1 small red onion, cut into wedges
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– Salt and pepper, to taste
– Fresh parsley, for garnish (optional)
Instructions:
1. Preheat the grill to medium heat. If using wooden skewers, soak them in water for at least 10 minutes to prevent burning.
2. In a bowl, combine the olive oil, garlic powder, paprika, salt, and pepper. Add the chicken cubes to the bowl and toss until evenly coated.
3. Thread the marinated chicken, zucchini, bell pepper, cherry tomatoes, and red onion onto the skewers, alternating the ingredients for a colorful presentation.
4. Place the skewers on the preheated grill. Cook for approximately 10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
5. Remove the skewers from the grill and let them rest for a few minutes.
6. Garnish with fresh parsley if desired, and serve immediately.
