Grilled Salmon with Avocado and Cucumber Salad

Ingredients:
2 salmon fillets (about 6 ounces each)
1 tablespoon olive oil
Salt and black pepper to taste
1 teaspoon lemon juice
1 ripe avocado, diced
1 medium cucumber, diced
1/4 red onion, finely chopped
1 tablespoon fresh dill or parsley, chopped

Instructions:

1. Preheat the grill or grill pan over medium-high heat. Brush the salmon fillets with olive oil and season with salt and black pepper.

2. Place the salmon fillets on the preheated grill. Grill for about 4-5 minutes on each side or until the salmon is cooked through and has nice grill marks.

3. While the salmon is grilling, prepare the salad. In a mixing bowl, combine the diced avocado, diced cucumber, finely chopped red onion, and fresh dill or parsley.

4. Drizzle the lemon juice over the salad mixture and gently toss to combine, being careful not to mash the avocado.

5. Once the salmon is done, remove it from the grill and let it rest for a couple of minutes.

6. Serve the grilled salmon on plates with a generous portion of the avocado and cucumber salad on the side. Enjoy your healthy, diabetic-friendly dinner.
