Spinach and Mushroom Stuffed Chicken Thighs

Ingredients
4 boneless, skinless chicken thighs
1 cup fresh spinach, chopped
1 cup mushrooms, finely chopped
2 cloves garlic, minced
1/2 cup cream cheese, softened
1/4 cup grated Parmesan cheese
1 teaspoon dried oregano
Salt and pepper to taste
Olive oil for cooking
Instructions
Preheat your oven to 375 degrees Fahrenheit.
In a skillet over medium heat, add a drizzle of olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.
Add the chopped mushrooms to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are browned and tender.
Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove the skillet from heat and let the mixture cool slightly.
In a mixing bowl, combine the cooled spinach and mushroom mixture with cream cheese, Parmesan cheese, oregano, salt, and pepper. Mix until well blended.
Pat the chicken thighs dry with a paper towel. Take a generous amount of the filling and place it in the center of each chicken thigh. Fold the sides of the thigh over the filling and secure with toothpicks or kitchen twine.
In an oven-safe skillet, heat a bit of olive oil over medium-high heat. Once hot, place the stuffed chicken thighs in the skillet and sear for about 3-4 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit.
Remove the stuffed chicken thighs from the oven and let them rest for a few minutes before removing toothpicks or twine.
