Caprese Salad with Avocado

Ingredients
– 1 large ripe avocado
– 1 cup cherry tomatoes, halved
– 1 cup fresh mozzarella balls (bocconcini)
– 1 cup fresh basil leaves
– 2 tablespoons extra virgin olive oil
– 1 tablespoon balsamic vinegar (optional)
– Salt and pepper to taste
Instructions
1. Cut the avocado in half, remove the pit, and scoop the flesh out of the skin. Slice the avocado into wedges or cubes.
2. In a large bowl, combine the halved cherry tomatoes, fresh mozzarella balls, and basil leaves.
3. Gently fold in the avocado slices to the bowl, being careful not to mash them.
4. Drizzle the olive oil over the salad and, if using, the balsamic vinegar.
5. Season with salt and pepper to taste.
6. Toss the ingredients gently to combine, ensuring that the avocado remains intact.
7. Serve immediately on a plate or in a bowl, garnished with additional basil leaves if desired.
