Grilled Shrimp with Zucchini and Cherry Tomatoes

Ingredients:
– 12 large shrimp, peeled and deveined
– 1 medium zucchini, sliced into thin rounds
– 1 cup cherry tomatoes, halved
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 teaspoon dried oregano
– Salt and pepper to taste
– Fresh parsley for garnish (optional)
– Lemon wedges for serving
Instructions:
1. Start by preheating your grill or grill pan to medium-high heat.
2. In a mixing bowl, combine the shrimp, zucchini, cherry tomatoes, olive oil, garlic, oregano, salt, and pepper. Toss everything together until the ingredients are evenly coated with the oil and seasonings.
3. Once the grill is hot, place the zucchini rounds and cherry tomato halves on the grill. Cook for about 2-3 minutes on each side until they are tender and have nice grill marks.
4. After removing the vegetables from the grill, place the shrimp on the grill. Cook for about 2-3 minutes on each side until the shrimp are opaque and cooked through.
5. Transfer the grilled shrimp and vegetables to a serving platter.
