Ingredients
2 salmon fillets
1 medium zucchini, sliced into thin rounds
2 tablespoons unsalted butter
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 tablespoon fresh parsley, chopped
Salt and pepper to taste

Instructions
Preheat the oven to 375 degrees Fahrenheit.

In a small saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the lemon juice, lemon zest, and chopped parsley. Set aside.

On a baking sheet lined with parchment paper, place the salmon fillets in the center. Surround the fillets with the zucchini slices. Drizzle the lemon butter mixture over the salmon and zucchini, ensuring everything is well coated.

Season the salmon and zucchini with salt and pepper to taste.

Bake in the preheated oven for about 15 to 20 minutes, or until the salmon is cooked through and flakes easily with a fork. The zucchini should be tender but still slightly crisp.

Once done, remove from the oven and let it rest for a couple of minutes. Serve warm, garnished with additional fresh parsley if desired. Enjoy your healthy, diabetic-friendly meal!
