Spinach and Feta Stuffed Bell Peppers

Ingredients
4 large bell peppers (any color)
2 cups fresh spinach, chopped
1 cup feta cheese, crumbled
1 small onion, finely diced
2 cloves garlic, minced
1 teaspoon olive oil
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley, for garnish

Instructions

1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
3. In a skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent, about 3 to 5 minutes.
4. Add the chopped spinach to the skillet and cook until wilted, about 2 minutes.
5. Remove the skillet from heat and stir in the crumbled feta cheese, dried oregano, salt, and pepper. Mix until well combined.
6. Stuff each bell pepper with the spinach and feta mixture, pressing down gently to pack the filling.
7. Place the stuffed peppers upright in a baking dish. Add a splash of water to the bottom of the dish to help steam the peppers.
8. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
9. Remove the foil and bake for an additional 5 minutes to allow the tops to brown slightly.
10. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
