Grilled Shrimp with Garlic and Zucchini

Ingredients
1 pound large shrimp, peeled and deveined
2 medium zucchinis, sliced into half-moons
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon paprika
Salt and black pepper to taste
Juice of 1 lemon
Fresh parsley, chopped for garnish
Instructions
Begin by preheating the grill or a grill pan over medium-high heat. In a mixing bowl, combine the cleaned shrimp, sliced zucchini, minced garlic, olive oil, paprika, salt, and black pepper. Toss the ingredients together until the shrimp and zucchini are evenly coated with the marinade.
Allow the mixture to marinate for about 5 minutes while the grill heats. Once ready, carefully place the shrimp and zucchini on the grill. Grill the shrimp for about 2 to 3 minutes on each side until they turn pink and opaque. Additionally, grill the zucchini for approximately 3 to 4 minutes, turning occasionally until they are tender and have grill marks.
Once cooked, remove the shrimp and zucchini from the grill and transfer them to a serving platter. Squeeze the fresh lemon juice over the top for added flavor. Garnish with chopped parsley for a fresh touch.
