Title: Beef and Broccoli Stir-Fry with Cauliflower Rice
Prep Time: 15 minutes
Cooking Time: 10 minutes
Total Time: 25 minutes
Servings: 2
Ingredients:
– 8 ounces of lean beef sirloin, thinly sliced
– 2 cups of broccoli florets
– 1 medium head of cauliflower, grated or processed into rice-sized pieces
– 2 tablespoons of olive oil
– 2 tablespoons of low-sodium soy sauce
– 1 tablespoon of oyster sauce (optional)
– 1 tablespoon of minced garlic
– 1 teaspoon of minced ginger
– Salt and pepper to taste
– Sesame seeds for garnish (optional)
Instructions:
1. Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower, then cut it into florets. In a food processor, pulse the florets until they resemble rice grains. Set aside.
2. Heat one tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the thinly sliced beef sirloin to the skillet. Season with salt and pepper, and stir-fry for about 3 to 4 minutes, or until the beef is browned and cooked through. Remove the beef from the skillet and set it aside.
3. In the same skillet, heat the remaining tablespoon of olive oil. Add the minced garlic and ginger, stirring quickly to avoid burning. Cook for about 30 seconds until fragrant.
4. Add the broccoli florets to the skillet and stir-fry for about 3 minutes until bright green and tender-crisp.
5. Return the cooked beef to the skillet and pour in the low-sodium soy sauce and oyster sauce, if using. Toss everything together for another minute, ensuring the beef and broccoli are well coated.
6. In a separate pan, lightly sauté the cauliflower rice over medium heat with a sprinkle of salt for about 3 to 5 minutes until tender.
7. To serve, place a portion of cauliflower rice on each plate and top it with the beef and broccoli stir-fry. Garnish with sesame seeds if desired.
