Cauliflower Rice with Ground Turkey and Veggies

Ingredients:
1 medium head of cauliflower
1 pound ground turkey (lean)
1 cup bell peppers, diced (any color)
1 cup zucchini, diced
1 cup spinach, chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon onion powder
1 teaspoon garlic powder
Salt and pepper to taste
Fresh parsley for garnish (optional)

Instructions:
1. Begin by washing the cauliflower thoroughly. Remove the leaves and stem, and cut it into smaller florets. Using a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.

2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about one minute until fragrant.

3. Add the ground turkey to the skillet and break it apart with a wooden spoon. Cook until the turkey is browned and fully cooked, around 5 to 7 minutes. Season with onion powder, garlic powder, salt, and pepper.

4. Stir in the diced bell peppers and zucchini to the skillet. Cook for an additional 4 to 5 minutes until the vegetables become tender.

5. Add the cauliflower rice to the skillet alongside the chopped spinach. Mix everything together and cook for another 5 to 7 minutes, allowing the cauliflower rice to soften and absorb the flavors.

6. Taste and adjust seasoning if necessary. Once everything is cooked and flavors melded, remove from heat.

7. Serve the cauliflower rice mixture hot, garnished with fresh parsley if desired. Enjoy this healthy and satisfying diabetic-friendly meal.
