Ingredients:
– 2 medium zucchinis
– 1 large egg
– 1/4 cup almond flour
– 1/4 cup grated Parmesan cheese
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– Salt and pepper to taste
– Olive oil for frying
– 1 cup plain Greek yogurt
– 1 tablespoon lemon juice
– 1 tablespoon fresh dill, finely chopped

Instructions:
1. Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
2. In a mixing bowl, combine the drained zucchini, egg, almond flour, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
3. Heat a non-stick skillet over medium heat and add a tablespoon of olive oil.
4. Spoon the zucchini mixture into the skillet, flattening them slightly to form fritters. Cook for 3 to 4 minutes on each side until golden brown. Add more oil if needed.
5. While the fritters are cooking, prepare the yogurt dip. In a bowl, mix the Greek yogurt, lemon juice, and fresh dill until smooth. Season with salt to taste.
6. Serve the zucchini fritters warm with the yogurt dip on the side.
