Ingredients
4 boneless, skinless chicken breasts
2 cups fresh spinach, chopped
1 cup feta cheese, crumbled
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper to taste
1 lemon, zested and juiced

Instructions

1. Preheat the oven to 375 degrees Fahrenheit.

2. In a medium bowl, combine the chopped spinach, feta cheese, minced garlic, lemon zest, and half of the lemon juice. Mix thoroughly and set aside.

3. Pat the chicken breasts dry with paper towels. Season each breast on both sides with salt, pepper, and dried oregano.

4. In a large oven-safe skillet, heat the olive oil over medium heat. Once hot, add the chicken breasts and sear them for about 3 minutes on each side until they are golden brown.

5. Once seared, remove the skillet from heat and carefully spoon the spinach and feta mixture on top of each chicken breast.

6. Transfer the skillet to the preheated oven and bake for approximately 25 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.

7. Remove the skillet from the oven, drizzle the remaining lemon juice over the chicken, and let it rest for a few minutes before serving.

8. Serve hot, garnished with extra spinach or a lemon wedge if desired.
