Roasted Chicken with Garlic Green Beans
Prep Time: 15 minutes
Cook Time: 40 minutes
Total Time: 55 minutes
Servings: 4
Ingredients
4 bone-in, skin-on chicken thighs
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
1 pound fresh green beans, trimmed
3 cloves garlic, minced
1 teaspoon lemon zest
1 tablespoon lemon juice
Fresh parsley for garnish
Instructions
Preheat the oven to 400 degrees Fahrenheit.
In a large bowl, combine olive oil, paprika, garlic powder, salt, and pepper. Add the chicken thighs and toss to coat them evenly in the seasoning mixture.
Place the chicken thighs skin side up on a baking sheet lined with parchment paper. Roast in the preheated oven for 25 minutes.
While the chicken is roasting, prepare the green beans. In a skillet over medium heat, add a teaspoon of olive oil and the minced garlic. Sauté for about one minute until fragrant, being careful not to burn the garlic.
Add the trimmed green beans to the skillet and toss to coat. Continue cooking for about 5 to 7 minutes until the green beans are bright green and slightly tender but still crisp.
Remove the skillet from heat and stir in the lemon zest and lemon juice. Season with salt and pepper to taste.
After the chicken has roasted for 25 minutes, add the garlic green beans to the baking sheet around the chicken. Return the baking sheet to the oven and roast for an additional 15 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit and the green beans are tender.
Once cooked, remove the baking sheet from the oven. Let the chicken rest for a few minutes before serving.
Plate the roasted chicken with the garlic green beans, and garnish with fresh parsley.
