1 pound boneless, skinless chicken breasts
1 cup almond flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
2 large eggs
2 tablespoons olive oil
Optional: fresh parsley for garnish

Instructions:

1. Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.

2. Cut the chicken breasts into strips, roughly the size of tenders.

3. In a shallow bowl or plate, combine the almond flour, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to ensure the spices are evenly distributed.

4. In another bowl, beat the eggs until well combined.

5. Dip each chicken strip first into the beaten eggs and then coat it generously with the almond flour mixture, pressing lightly to ensure the coating adheres.

6. Heat the olive oil in a large skillet over medium heat. Once hot, add half of the coated chicken tenders to the skillet. Cook for about 3-4 minutes on each side or until golden brown and cooked through.

7. Transfer the cooked chicken strips to the prepared baking sheet. Repeat the process with the remaining chicken tenders.

8. Bake the chicken tenders in the oven for an additional 10 minutes to ensure they are fully cooked and crispy.

9. Remove from the oven and let cool for a couple of minutes before serving. Optionally, garnish with fresh parsley.

10. Serve with a side of sugar-free dipping sauce or a fresh green salad for a complete diabetic-friendly lunch.
