Grilled Eggplant with Tomato and Mozzarella

Ingredients
1 medium eggplant
1 large ripe tomato
4 ounces fresh mozzarella cheese
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions
Begin by slicing the eggplant into ½-inch thick rounds. Sprinkle salt on both sides of the slices and allow them to sit for about 10 minutes to draw out excess moisture. Rinse and pat dry with paper towels.
Preheat a grill or grill pan over medium-high heat. Drizzle the olive oil over the eggplant slices, ensuring they are well coated. Season with pepper and dried oregano for added flavor.
Place the eggplant slices on the hot grill and cook for about 4 minutes on each side, or until they are tender and have grill marks.
While the eggplant is grilling, slice the tomato and mozzarella into rounds.
Once the eggplant is cooked, layer it on a serving platter by placing a slice of eggplant, a slice of tomato, and a slice of mozzarella. Repeat the layering until all ingredients are used.
Drizzle any remaining olive oil over the top, and season with additional salt and pepper if needed.
Garnish with fresh basil leaves before serving.
