Grilled Steak with Arugula and Parmesan

Ingredients:
– 2 ribeye steaks or sirloin steaks (about 6 oz each)
– 4 cups fresh arugula
– 2 tablespoons olive oil
– 2 tablespoons balsamic vinegar (optional, for drizzling)
– 1/4 cup shaved Parmesan cheese
– Salt and pepper to taste
– 1 teaspoon garlic powder
– 1 teaspoon fresh lemon juice (optional)
Instructions:
1. Preheat the grill to medium-high heat.
2. While the grill is heating, season the steaks with salt, pepper, and garlic powder on both sides. Let them sit at room temperature for about 10 minutes.
3. Drizzle 1 tablespoon of olive oil over the arugula and toss to coat. If desired, add a squeeze of fresh lemon juice for brightness.
4. Place the seasoned steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until your preferred doneness. Remove from the grill and let rest for 5 minutes.
5. Divide arugula onto two plates and top with shaved Parmesan cheese.
6. Slice the rested steaks against the grain and place on top of the arugula.
7. Drizzle the remaining olive oil and balsamic vinegar over the salad and steak for added flavor.
