Spinach and Feta Stuffed Chicken Thighs

Ingredients
4 boneless, skinless chicken thighs
2 cups fresh spinach, chopped
1 cup feta cheese, crumbled
1 clove garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano
Salt and pepper to taste
Fresh lemon juice (optional, for serving)
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a skillet over medium heat, add olive oil. Once hot, add minced garlic and sauté for about 1 minute until fragrant.
3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
4. Remove the skillet from heat and mix in crumbled feta cheese and dried oregano. Season with salt and pepper to taste.
5. Pat the chicken thighs dry with a paper towel. With a sharp knife, create a small pocket in each thigh by slicing horizontally, being careful not to cut all the way through.
6. Stuff each chicken thigh with the spinach and feta mixture, dividing it evenly among the thighs.
7. Place the stuffed chicken thighs seam side down in a baking dish. Brush the tops lightly with a little olive oil and season with additional salt, pepper, and oregano if desired.
8. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
9. Once done, remove from oven and let rest for about 5 minutes before slicing.
10. Serve warm, drizzled with a little fresh lemon juice if desired for added flavor.
