Grilled Eggplant with Feta and Mint

Ingredients:
1 medium eggplant, sliced into ½-inch rounds
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper to taste
¼ cup crumbled feta cheese
2 tablespoons fresh mint, chopped
1 tablespoon balsamic vinegar (optional)
Instructions:
Begin by preheating your grill or grill pan over medium heat.
In a mixing bowl, combine the eggplant slices with olive oil, garlic powder, salt, and pepper. Toss until all the slices are evenly coated.
Place the eggplant slices on the grill and cook for about 5 minutes on each side, or until they are tender and have nice grill marks.
Once cooked, transfer the eggplant to a serving platter.
Sprinkle the crumbled feta cheese over the warm eggplant.
Top the dish with chopped fresh mint for a burst of flavor.
