Baked Salmon with Zucchini and Cherry Tomatoes

Ingredients:
2 salmon fillets
1 medium zucchini, sliced into half-moons
1 cup cherry tomatoes, halved
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
Fresh lemon wedges for serving
Fresh basil for garnish (optional)

Instructions:

Preheat the oven to 400 degrees Fahrenheit.

In a large mixing bowl, combine the zucchini and cherry tomatoes. Drizzle with one tablespoon of olive oil, and add the minced garlic, oregano, salt, and pepper. Toss until the vegetables are well coated.

On a baking sheet lined with parchment paper, place the salmon fillets in the center. Drizzle the remaining tablespoon of olive oil over the fillets and season with salt and pepper.

Surround the salmon with the seasoned zucchini and cherry tomatoes.

Bake in the preheated oven for 15 to 18 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.

Remove from the oven and let it rest for a few minutes. Serve with fresh lemon wedges and garnish with basil if desired.
