Zucchini Lasagna with Ground Turkey

Ingredients
2 medium zucchinis
1 pound ground turkey
1 cup ricotta cheese
1 egg
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup marinara sauce (no added sugar)
1 cup shredded mozzarella cheese
Salt and pepper to taste
Fresh basil for garnish
Instructions
Preheat the oven to 375 degrees Fahrenheit.
Slice the zucchinis lengthwise into thin strips using a mandoline or sharp knife, ensuring they are about 1/4 inch thick. Place the zucchini strips on paper towels and sprinkle with salt. Let them sit for about 10 minutes to draw out excess moisture.
In a skillet over medium heat, cook the ground turkey, breaking it apart with a spatula, until it is browned and fully cooked, about 7 to 10 minutes. Add garlic powder, onion powder, oregano, salt, and pepper to the turkey. Mix well and remove from heat.
In a mixing bowl, combine the ricotta cheese, egg, a pinch of salt, and pepper. Stir until smooth.
Begin assembling the lasagna in a greased baking dish. Start with a layer of marinara sauce on the bottom. Repeat the layers, finishing with a layer of marinara sauce and the remaining mozzarella cheese on top.
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
Remove the lasagna from the oven and let it sit for about 10 minutes before slicing. Garnish with fresh basil before serving.
