8 large shrimp, peeled and deveined
2 medium zucchinis
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon lemon juice
Salt and pepper to taste
1 teaspoon Italian seasoning
Fresh parsley for garnish (optional)

Instructions:
Begin by using a spiralizer or a julienne peeler to create noodles from the zucchinis. Set the zucchini noodles aside on a paper towel to absorb excess moisture.

In a medium bowl, combine the shrimp, garlic, olive oil, lemon juice, salt, pepper, and Italian seasoning. Mix until the shrimp are evenly coated in the marinade. Let sit for about 5 minutes to enhance the flavor.

Preheat a grill pan or outdoor grill over medium-high heat. Once hot, arrange the marinated shrimp on the grill and cook for 2 to 3 minutes on each side, or until they are pink and opaque.

While the shrimp are grilling, heat a non-stick skillet over medium heat. Add the zucchini noodles and sauté for 2 to 3 minutes, just until they are slightly softened but still al dente. Season with a pinch of salt and pepper.

To serve, place a bed of zucchini noodles on each plate and top with the grilled shrimp. Garnish with fresh parsley if desired. Enjoy this healthy, flavorful, and low-carb lunch!
