Ingredients
2 tilapia fillets
1 medium zucchini, sliced into rounds
1 tablespoon olive oil
1 lemon, zested and juiced
2 cloves garlic, minced
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Preheat the oven to 375 degrees Fahrenheit.
In a small bowl, mix the olive oil, lemon zest, lemon juice, minced garlic, salt, and pepper to create a marinade.
Place the tilapia fillets in a baking dish and pour half of the marinade over the fish, ensuring it is evenly coated.
Arrange the zucchini rounds around the tilapia in the baking dish, then drizzle the remaining marinade over the zucchini.
Cover the baking dish with aluminum foil to retain moisture and bake in the preheated oven for 15 minutes.
After 15 minutes, remove the foil and bake for an additional 5 minutes, or until the tilapia is cooked through and flakes easily with a fork.
Once done, remove from the oven, garnish with fresh parsley, and serve hot.
