Total time: 35 minutes
Servings: 2
Ingredients
2 salmon fillets
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 ripe avocado, diced
1 small tomato, diced
1/4 cup red onion, finely chopped
1 lime, juiced
1 tablespoon fresh cilantro, chopped
Instructions
Preheat the oven to 375 degrees Fahrenheit.
In a small bowl, mix the olive oil, garlic powder, onion powder, salt, and pepper. Brush this mixture over the salmon fillets, coating them evenly.
Place the salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15 to 20 minutes, or until the salmon flakes easily with a fork.
While the salmon is baking, prepare the avocado salsa. In another bowl, combine the diced avocado, diced tomato, chopped red onion, lime juice, and cilantro. Gently toss the ingredients together until well mixed.
Once the salmon is done, remove it from the oven and allow it to cool slightly. Serve each salmon fillet topped with a generous spoonful of the avocado salsa.
