Cucumber and Dill Salad

Ingredients:
4 medium cucumbers, thinly sliced
1 cup fresh dill, finely chopped
1/2 cup plain Greek yogurt (unsweetened)
2 tablespoons fresh lemon juice
1 tablespoon olive oil
Salt and pepper to taste
Optional: Cherry tomatoes for garnish (use sparingly for minimal carbs)
Instructions:
1. In a large mixing bowl, combine the thinly sliced cucumbers and chopped dill. Toss them gently to combine.
2. In a separate bowl, whisk together the Greek yogurt, lemon juice, olive oil, salt, and pepper until smooth and creamy.
3. Pour the dressing over the cucumber and dill mixture. Toss everything together until the cucumbers are well coated.
4. Taste and adjust seasoning with more salt, pepper, or lemon juice as needed.
5. If desired, add a few halved cherry tomatoes for garnish before serving.
6. Serve chilled or at room temperature.
