Cauliflower and Broccoli Stir-Fry with Chicken

Ingredients
1 pound boneless, skinless chicken breast, diced
2 cups cauliflower florets
2 cups broccoli florets
3 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 tablespoons low-sodium soy sauce
1 tablespoon sesame oil
Salt and black pepper to taste
2 green onions, sliced for garnish
Sesame seeds for garnish (optional)
Instructions
1. Start by heating 2 tablespoons of olive oil in a large skillet or wok over medium-high heat.
2. Add the diced chicken breast to the skillet and season with salt and black pepper. Sauté for about 5-7 minutes, or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.
3. In the same skillet, add the remaining tablespoon of olive oil. Then add the minced garlic and ginger, stirring quickly to release their fragrance, about 30 seconds.
4. Next, add the cauliflower and broccoli florets to the skillet. Stir-fry the vegetables for about 5-7 minutes, or until they are tender-crisp.
5. Return the cooked chicken to the skillet, and pour in the low-sodium soy sauce and sesame oil. Toss everything together to combine and allow the mixture to cook for an additional 2-3 minutes, ensuring everything is heated through.
6. Taste and adjust seasoning if needed, adding more salt or pepper.
7. Once done, remove from heat and transfer to a serving dish. Garnish with sliced green onions and sesame seeds if desired.
