Grilled Eggplant with Tomato and Basil

Ingredients
1 large eggplant
2 medium ripe tomatoes
1 cup fresh basil leaves
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper to taste
Balsamic vinegar for drizzling (optional)
Instructions
1. Start by preparing the eggplant. Cut it into 1/2-inch thick slices. Place the slices on a paper towel and sprinkle a little salt on top. Let them sit for about 10 minutes to draw out excess moisture and bitterness.
2. Meanwhile, wash and dice the tomatoes into small pieces. Chop the fresh basil leaves finely and set aside.
3. After 10 minutes, pat the eggplant slices dry with a paper towel to remove any moisture.
4. Preheat a grill or grill pan over medium heat. Brush both sides of the eggplant slices with olive oil and sprinkle them with garlic powder, salt, and pepper.
5. Place the eggplant slices on the grill and cook for about 5 minutes on each side, or until they are tender and have nice grill marks.
6. While the eggplant is grilling, combine the diced tomatoes and chopped basil in a bowl. Drizzle with a little olive oil and add a pinch of salt and pepper to taste.
7. Once the eggplant is done, remove it from the grill and arrange the slices on a serving platter. Top each slice with a spoonful of the tomato and basil mixture.
8. If desired, drizzle a little balsamic vinegar over the top for added flavor.
