Cauliflower and Spinach Bake with Cheese

Ingredients
1 medium head of cauliflower, cut into florets
2 cups fresh spinach, roughly chopped
1 cup shredded mozzarella cheese
1 cup ricotta cheese
2 large eggs
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
1 tablespoon olive oil
Fresh parsley for garnish (optional)
Instructions
Preheat the oven to 375 degrees Fahrenheit.
In a large pot, bring water to a boil and add the cauliflower florets. Blanch the florets for about 5 minutes until just tender. Drain and let them cool slightly.
In a mixing bowl, combine the ricotta cheese, eggs, minced garlic, Italian seasoning, salt, and pepper. Stir until well combined.
In a large baking dish, mix the blanched cauliflower and chopped spinach. Pour the ricotta mixture on top and gently fold to combine.
Sprinkle the shredded mozzarella cheese evenly over the top of the mixture.
Drizzle olive oil over the cheese layer for added richness.
Bake in the preheated oven for 25 to 30 minutes or until the cheese is bubbly and golden brown.
Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired and serve warm.
