Ingredients:
– 1 cup cauliflower rice
– 1 cup fresh spinach leaves
– 2 large eggs
– 1 tablespoon olive oil
– 1 clove garlic, minced
– Salt and pepper to taste
– Optional: pinch of red pepper flakes for heat
– Optional: fresh herbs for garnish (such as parsley or chives)

Instructions:
1. Heat the olive oil in a medium skillet over medium heat.
2. Add the minced garlic to the skillet and sauté for about 30 seconds, until fragrant.
3. Stir in the spinach and cook for 2-3 minutes until wilted. Season with salt and pepper. Remove the spinach from the skillet and set aside.
4. In the same skillet, add the cauliflower rice. Cook for about 5 minutes, stirring occasionally, until slightly tender. Season with salt and pepper.
5. Create a small well in the center of the cauliflower rice. Crack the eggs into the well and cook them sunny-side up or to your preferred doneness, about 3-4 minutes.
6. Return the sautéed spinach to the skillet, gently mixing it with the cauliflower rice and eggs.
7. If desired, sprinkle red pepper flakes and fresh herbs on top for added flavor.
8. Serve hot and enjoy your healthy, low-carb breakfast.
