1 large cucumber, diced
2 medium tomatoes, diced
1 ripe avocado, diced
1/4 red onion, finely chopped
2 tablespoons fresh lemon juice
2 tablespoons olive oil
Salt and pepper to taste
Fresh parsley for garnish

Instructions:

Start by washing the cucumber, tomatoes, and parsley thoroughly under cold water.
Dice the cucumber into bite-sized pieces and place them in a large mixing bowl.
Next, dice the tomatoes and add them to the bowl with the cucumber.
Cut the avocado in half, remove the pit, and scoop out the flesh. Dice the avocado and add it to the bowl.
Finely chop the red onion and mix it into the salad.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
Pour the dressing over the vegetable mixture and gently toss until everything is well coated.
Garnish the salad with freshly chopped parsley for added flavor and presentation.
Serve immediately or refrigerate for up to one hour to allow the flavors to meld.
