Ingredients:
6 large eggs
1 cup fresh spinach, chopped
1/2 cup cherry tomatoes, halved
1/4 cup feta cheese, crumbled
1/4 cup onion, finely chopped
1 clove garlic, minced
Salt and pepper to taste
1 tablespoon olive oil
Fresh herbs for garnish (optional)
Instructions:
1. Preheat the oven to 350°F (175°C) and lightly grease a 9-inch pie dish or baking dish with olive oil.
2. In a large mixing bowl, crack the eggs and whisk them until combined. Add salt and pepper to taste.
3. In a skillet over medium heat, add olive oil. Sauté the chopped onion and minced garlic for about 2-3 minutes until fragrant and translucent.
4. Add the chopped spinach to the skillet and cook for another 2 minutes, until wilted.
5. Remove the skillet from heat and let cool slightly. Then, combine the sautéed mixture with the whisked eggs. Add the halved cherry tomatoes and feta cheese, mixing everything gently.
6. Pour the frittata mixture into the prepared pie dish, spreading it evenly.
7. Bake in the preheated oven for 20-25 minutes, or until the frittata is set and slightly golden on top.
8. Remove from the oven and let cool for a few minutes. Slice and serve warm, garnished with fresh herbs if desired.
