Grilled Chicken with Zucchini and Avocado

Ingredients:
2 boneless, skinless chicken breasts
1 medium zucchini, sliced
1 ripe avocado, diced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
Fresh lemon juice for drizzling
Chopped fresh parsley for garnish (optional)
Instructions:
1. Begin by marinating the chicken breasts. In a small bowl, mix 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Rub this mixture evenly over the chicken breasts.
2. Preheat the grill or grill pan over medium-high heat. While the grill is heating, prepare the zucchini by tossing the slices with salt, pepper, and 1 tablespoon of olive oil.
3. Grill the chicken breasts for about 6-7 minutes on each side or until they are cooked through and have nice grill marks. The internal temperature should reach 165 degrees Fahrenheit.
4. At the same time, place the seasoned zucchini slices on the grill next to the chicken. Grill for around 3-4 minutes on each side until tender and slightly charred.
5. Once cooked, remove the chicken and zucchini from the grill. Allow the chicken to rest for a few minutes before slicing.
6. To serve, plate the grilled chicken and arrange the zucchini alongside. Top with diced avocado and drizzle with fresh lemon juice.
7. Optional: garnish with fresh parsley for added flavor and presentation.
