Cauliflower Pizza with Spinach and Ricotta

Ingredients
1 medium head of cauliflower, riced
1 cup fresh spinach, chopped
1 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1 large egg
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
1/4 cup grated Parmesan cheese
Olive oil for drizzling
Fresh basil leaves for garnish (optional)

Instructions

1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

2. To make cauliflower rice, remove the leaves and stem from the cauliflower, then cut it into florets. Place the florets in a food processor and pulse until fine and grainy.

3. Transfer the riced cauliflower to a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible, ensuring it’s very dry. This will help create a firmer crust.

4. In a large mixing bowl, combine the dried cauliflower rice, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

5. Spread the cauliflower mixture onto the prepared baking sheet in a round shape, about half an inch thick. Make sure to press it down firmly to create a solid crust.

6. Bake the crust in the preheated oven for 15 to 20 minutes, or until golden brown and firm to the touch.

7. While the crust is baking, in another bowl, combine ricotta cheese, chopped spinach, and half of the shredded mozzarella cheese. Mix well and season with salt and pepper to taste.

8. Once the crust is done baking, remove it from the oven and spread the ricotta-spinach mixture evenly over the top.

9. Sprinkle the remaining mozzarella cheese and Parmesan cheese on top of the spinach-ricotta mixture.

10. Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

11. Remove from the oven and let it cool for a couple of minutes. Drizzle with a little olive oil and garnish with fresh basil leaves if desired.

12. Slice and serve the cauliflower pizza while warm. Enjoy a delicious, low-carb dinner that satisfies your cravings!
