Cauliflower and Spinach Quiche using Almond Flour Crust

Ingredients:
For the crust:
1 ½ cups almond flour
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 cup unsalted butter, melted
1 large egg

For the filling:
1 cup cauliflower, finely chopped
2 cups fresh spinach, chopped
3 large eggs
1 cup unsweetened almond milk
1/2 cup shredded cheese (preferably mozzarella or cheddar)
Salt and pepper to taste
1/2 teaspoon dried oregano
1/2 teaspoon smoked paprika

Instructions:

1. Preheat your oven to 350 degrees Fahrenheit.

2. In a mixing bowl, combine almond flour, salt, garlic powder, melted butter, and one egg. Mix until the dough is well combined.

3. Press the almond flour mixture into a pie dish to form the crust, making sure to cover the bottom and sides evenly. Prick the bottom with a fork to prevent bubbling.

4. Bake the crust in the oven for 10 minutes, then remove and set aside to cool slightly.

5. In a skillet over medium heat, sauté the chopped cauliflower for about 5 minutes until slightly softened. Add the spinach and cook for an additional 2 minutes until wilted. Remove from heat and allow to cool briefly.

6. In a large mixing bowl, whisk together the three eggs and almond milk. Add the sautéed vegetables, cheese, salt, pepper, oregano, and smoked paprika. Mix until everything is fully combined.

7. Pour the filling mixture into the pre-baked almond flour crust, spreading it evenly.

8. Bake in the oven for another 30 minutes or until the filling is set and lightly golden on top.

9. Allow the quiche to cool for a few minutes before slicing and serving. Enjoy your nutritious and delicious low-carb dinner option!
