Ingredients:
– 1 large cucumber
– 1 cup low-fat cottage cheese
– 1 cup fresh spinach leaves
– 1 medium bell pepper (any color), finely chopped
– 1 tablespoon fresh dill, chopped
– 1 tablespoon lemon juice
– Salt and pepper to taste
– Optional: red pepper flakes for heat

Instructions:
1. Start by washing the cucumber thoroughly. Slice the cucumber lengthwise into thin strips to create “wraps.”
2. In a mixing bowl, combine the cottage cheese, chopped bell pepper, fresh dill, lemon juice, salt, and pepper. Mix until well combined.
3. Lay out the spinach leaves on a clean surface. Place a cucumber strip on each leaf.
4. Spoon the cottage cheese mixture onto the cucumber strips.
5. Carefully roll the spinach leaf around the cucumber and cottage cheese filling to create a wrap. Repeat until all ingredients are used.
6. If desired, sprinkle red pepper flakes on top for added flavor.
