Prep Time: 15 minutes
This refreshing salad combines fresh spinach with crispy turkey bacon, providing a nutritious and satisfying meal that is low in carbs and sugar, making it ideal for a diabetic-friendly lunch.
Ingredients
4 cups fresh spinach, washed and dried
4 strips turkey bacon
1/2 avocado, diced
1/4 cup cherry tomatoes, halved
2 tablespoons crumbled feta cheese
1 tablespoon olive oil
1 tablespoon apple cider vinegar
Salt and pepper to taste
Instructions
Begin by cooking the turkey bacon in a skillet over medium heat until crispy, which usually takes about 5 to 7 minutes. Once cooked, remove the bacon from the skillet and let it cool on a paper towel to absorb excess grease.
While the bacon cools, prepare the salad base by placing the fresh spinach in a large serving bowl. You can tear the spinach into smaller pieces if desired.
Next, slice the cooled turkey bacon into bite-sized pieces and add it to the bowl with the spinach.
Add the diced avocado and halved cherry tomatoes to the salad, distributing them evenly.
Sprinkle crumbled feta cheese over the top for added flavor.
In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper to create a simple dressing.
Drizzle the dressing over the salad and toss gently to combine all ingredients.
Serve immediately for a crisp and delicious lunch that is packed with nutrients and flavor while remaining low in carbohydrates and sugar.
