Stuffed Zucchini with Ground Turkey

Ingredients
2 medium zucchini
1 pound ground turkey
1 small onion, finely chopped
2 cloves garlic, minced
1 cup diced tomatoes (fresh or canned, no added sugar)
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
1 cup shredded mozzarella or cheddar cheese (optional)
Olive oil for sautéing

Instructions
1. Preheat the oven to 375 degrees Fahrenheit.
2. Begin by washing the zucchini. Slice them in half lengthwise and use a spoon to scoop out some of the flesh, leaving about a quarter inch of zucchini on the sides to create a boat.
3. Heat a tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté for about 3 minutes until it becomes translucent.
4. Add the minced garlic to the skillet and cook for an additional minute, stirring frequently.
5. Add the ground turkey to the skillet, breaking it apart with a spoon. Cook for 5 to 7 minutes until the turkey is browned and cooked through.
6. Stir in the diced tomatoes, zucchini flesh, oregano, thyme, salt, and pepper. Let this mixture simmer for about 5 minutes until heated through.
7. Remove the skillet from heat and spoon the turkey mixture generously into each zucchini boat.
8. If using cheese, sprinkle it evenly on top of the stuffed zucchini.
9. Place the stuffed zucchini in a baking dish and cover with aluminum foil. Bake in the preheated oven for 20 minutes.
10. For an extra golden cheese topping, remove the foil and bake for an additional 5 to 10 minutes until the cheese is melted and bubbly.
11. Remove from the oven and let cool for a few minutes before serving. Enjoy your delicious, low-carb stuffed zucchini with ground turkey!
