Spinach and Ricotta Stuffed Turkey Breast

Ingredients
1 pound turkey breast (boneless and skinless)
1 cup fresh spinach, chopped
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1 clove garlic, minced
1 teaspoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
In a mixing bowl, combine the cooked spinach, ricotta cheese, Parmesan cheese, salt, pepper, and nutmeg. Mix until well blended.
Using a sharp knife, create a pocket in the turkey breast by slicing it horizontally without cutting all the way through. Carefully fill the pocket with the spinach and ricotta mixture.
Secure the opening of the turkey breast using toothpicks or kitchen twine to keep the filling inside while cooking.
Place the stuffed turkey breast in a baking dish and season the outside with a little more salt and pepper.
Bake in the preheated oven for about 40 minutes, or until the turkey is cooked through and the internal temperature reaches 165°F (75°C).
Remove from oven and let it rest for 5 minutes before slicing.
