Egg and Cheese Breakfast Quesadilla using Low-Carb Tortilla

Ingredients:
1 low-carb tortilla
2 large eggs
1/4 cup shredded cheddar cheese (or cheese of your choice)
1 tablespoon olive oil or cooking spray
Salt and pepper to taste
1 tablespoon fresh chives or green onions, chopped (optional)

Instructions:
1. In a small bowl, crack the eggs and whisk them until well combined. Season with salt and pepper to taste.
2. Heat olive oil in a skillet over medium heat. If using cooking spray, spray the skillet lightly before adding the eggs.
3. Pour the whisked eggs into the skillet. Cook for about 2-3 minutes, stirring occasionally, until the eggs are just set but still fluffy.
4. Once the eggs are cooked, remove them from the heat and set aside.
5. In the same skillet, place the low-carb tortilla and sprinkle half of the shredded cheese over one half of the tortilla.
6. Add the scrambled eggs on top of the cheese, then sprinkle the remaining cheese over the eggs.
7. Fold the tortilla in half to create a quesadilla. Cook for an additional 2 minutes, or until the cheese has melted and the tortilla is slightly crispy.
8. Carefully flip the quesadilla and cook for another minute to crisp the other side.
9. Remove from the skillet, cut into wedges, and garnish with fresh chives or green onions if desired. Serve immediately.
