For the Turkey Meatloaf:
1 pound ground turkey
1/2 cup chopped onion
2 cloves garlic, minced
1/2 cup chopped bell pepper
1 large egg
1/4 cup almond flour
1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1/4 cup unsweetened tomato sauce (for topping)

For the Cauliflower Mash:
1 medium head of cauliflower, chopped into florets
2 tablespoons unsalted butter
1/4 cup unsweetened almond milk
Salt and pepper to taste
Chopped parsley (for garnish)

Instructions:

1. Preheat the oven to 350 degrees Fahrenheit.
2. In a large mixing bowl, combine the ground turkey, onion, garlic, bell pepper, egg, almond flour, Worcestershire sauce, oregano, salt, and black pepper. Mix until well combined.
3. Form the turkey mixture into a loaf shape and place it in a lightly greased baking dish. Spread the unsweetened tomato sauce evenly over the top of the meatloaf.
4. Bake in the preheated oven for 45 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
5. While the meatloaf is baking, prepare the cauliflower mash. Steam the cauliflower florets until tender, about 10 minutes.
6. Drain the steamed cauliflower and transfer it to a mixing bowl. Add the unsalted butter, almond milk, salt, and pepper. Use an immersion blender or potato masher to blend until smooth and creamy.
7. When the meatloaf is done, let it rest for a few minutes before slicing. Serve slices of meatloaf alongside the cauliflower mash.
8. Garnish the mash with chopped parsley for a touch of freshness.
