1 medium head of cauliflower, riced
1 cup bell pepper, diced (any color)
1 small onion, diced
2 cloves garlic, minced
200 grams turkey sausage, sliced
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon smoked paprika
2 large eggs
Fresh parsley, chopped for garnish

Instructions:
Begin by preparing the cauliflower. Remove the leaves and stem from the cauliflower, then cut it into florets. Place the florets in a food processor and pulse until it resembles rice. Set aside.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 3 minutes until they become soft.

Add the minced garlic and turkey sausage slices to the skillet. Cook for an additional 5 minutes, stirring occasionally, until the sausage is cooked through and starting to brown.

Stir the riced cauliflower into the skillet. Season with salt, pepper, and smoked paprika. Cook for another 5-7 minutes, stirring frequently, until the cauliflower is tender and slightly crispy.

While the cauliflower hash is cooking, prepare the eggs. In a separate non-stick skillet, cook the eggs to your preference (scrambled, fried, or poached).

Serve the cauliflower hash hot on plates, topping each serving with a cooked egg. Garnish with fresh parsley for a burst of color and flavor. Enjoy your nutritious, low-carb breakfast!
