Cucumber and Avocado Roll-Ups

Ingredients:
1 large cucumber
1 ripe avocado
2 tablespoons cream cheese (low-fat if preferred)
2 tablespoons fresh dill or parsley, chopped
1 tablespoon lemon juice
Salt and pepper to taste
Optional: Slices of smoked salmon or turkey for extra protein
Instructions:
1. Start by washing the cucumber thoroughly. Using a vegetable peeler or mandoline, slice the cucumber into long, thin strips. Aim for about 8 to 10 strips.
2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth, then mix in cream cheese, lemon juice, herbs, salt, and pepper. Stir until well combined.
3. Lay a cucumber strip flat on a cutting board. Spoon a generous amount of the avocado mixture onto one end of the cucumber strip, and if desired, place a small piece of smoked salmon or turkey on top.
4. Carefully roll the cucumber strip away from you, enclosing the filling. Repeat this process with the remaining cucumber strips.
5. Once all strips are rolled, place them on a serving plate. You can slice them in half for easier eating if desired.
