Cauliflower Rice with Grilled Turkey and Vegetables

Ingredients
1 medium head of cauliflower
1 pound ground turkey
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and pepper to taste
1 bell pepper (any color), diced
1 zucchini, diced
1 cup spinach
Fresh parsley for garnish
Instructions
Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower. Cut the head into florets and place them in a food processor. Pulse until the cauliflower resembles rice grains. Set aside.
In a large bowl, combine the ground turkey, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined, then form the mixture into patties or meatballs.
Heat a grill pan or outdoor grill over medium-high heat. Once hot, add the turkey patties and cook for about 5 to 6 minutes on each side, or until they reach an internal temperature of 165 degrees Fahrenheit. Remove from the grill and let rest while you prepare the vegetables.
In the same grill pan, add the diced bell pepper and zucchini. Grill for about 5 to 7 minutes until tender and slightly charred. In the last minute of cooking, add the spinach to the pan, stirring until just wilted.
While the vegetables are grilling, steam the cauliflower rice in a microwave-safe bowl with a splash of water for about 3 to 4 minutes, or until tender. Drain any excess water.
To serve, place a portion of cauliflower rice on each plate, top with grilled turkey, and pile on the grilled vegetables. Garnish with fresh parsley and enjoy a delicious, low-carb, diabetic-friendly meal.
