Ingredients
4 boneless, skinless chicken breasts
2 cups fresh spinach, chopped
1 cup feta cheese, crumbled
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano
Salt and pepper to taste
1 tablespoon lemon juice
Fresh parsley, chopped (for garnish)

Instructions
Preheat the oven to 375 degrees Fahrenheit.

In a skillet over medium heat, add the olive oil and sauté the minced garlic until fragrant, about 1 minute. Add the chopped spinach and continue cooking until wilted, approximately 3 to 4 minutes. Remove from heat and let cool slightly.

In a mixing bowl, combine the wilted spinach, crumbled feta cheese, dried oregano, salt, pepper, and lemon juice. Mix until well combined.

Carefully slice a pocket into each chicken breast, ensuring not to cut all the way through. Season the outside of the chicken breasts with salt and pepper.

Stuff each chicken breast with the spinach and feta mixture, securing the openings with toothpicks if necessary.

Place the stuffed chicken breasts in a baking dish and bake for 25 to 30 minutes, or until the internal temperature reaches 165 degrees Fahrenheit and the chicken is fully cooked.

Once done, remove from the oven and let rest for about 5 minutes before serving. Garnish with chopped fresh parsley.

Serve the stuffed chicken alongside a side of steamed vegetables for a nutritious, low-carb meal. Enjoy!
