Baked Chicken with Zucchini and Mushrooms

Ingredients
4 boneless, skinless chicken breasts
2 medium zucchinis, sliced into half-moons
1 cup mushrooms, sliced
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Preheat the oven to 400 degrees Fahrenheit.
In a large mixing bowl, combine the sliced zucchinis, mushrooms, minced garlic, olive oil, oregano, thyme, salt, and pepper. Toss until the vegetables are well coated with the oil and seasonings.
Place the seasoned vegetables in a single layer on a large baking sheet.
Season the chicken breasts with salt, pepper, oregano, and thyme on both sides. Place the seasoned chicken on top of the vegetables on the baking sheet.
Bake in the preheated oven for 25 to 30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit. The vegetables should be tender and slightly golden.
